Baked Eggplant

One large or 2 small eggplants
1 cup grated cheese
1 cup cracker crumbs
1 cup milk
2 eggs, well beaten
1 bell pepper, chopped fine
Salt and pepper

Peel and cook eggplant in salted water until tender. Drain and mash. Mix all ingredients together and place in baking dish. Dot with butter on top and bake for 30 minutes, or until firm.
