Carrot Bread

2/3 cup oil
1 cup sugar
2 eggs, beaten
1 1/2 cups flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1 cup grated carrots
2/3 cup nuts (optional)

Combine oil, sugar and eggs. Sift flour, soda, cinnamon, salt and carrots together separately, and then add into oil/sugar/eggs mixture. Bake in floured loaf pan 350 degrees for 45 minutes.
