Sour Cream Sole
1 1/2 lbs sole fillets (may substitute with rockfish or halibut)
1 cube butter or margarine, melted
Salt and pepper
2 cups sour cream
1 lb cheddar cheese, shredded
1 package almonds, sliced
Rinse fish and pat dry. Dip fish in butter, sprinkle both sides with paprika, salt and
pepper. Place fish in baking dish. Bake in 350 degree oven for 30 minutes or until
fish flakes easily. When fish is done, drain butter, leaving a little to cover bottom
of dish. Spread sour cream over fish to completely cover. Spread cheese over entire
dish, sprinkle almonds on top. Return to oven until cheese melts, about 10-15 minutes.
Serve with French bread and green salad.
