Strawberry Sponge Pie

1/2 cup sugar
1 1/2 cups crushed strawberries
1 package strawberry jello
3 egg yolks, slightly beaten
3 egg whites
1/4 tsp salt
9" graham cracker crust
or baked pie shell


Sprinkle 4 tbsp of the sugar over the berries and let stand 10 minutes. Dissolve strawberry jello in 1 cup hot water. Drain 1/4 cup of juice from the berries. Add egg yolks and cook in double boiler until thickened, stirring constantly. Remove from heat and add jello, stirring constantly. Chill until slightly thickened, then fold in berries. Beat egg whites and salt until foamy. Add remaining 4 tbsp sugar gradually, beating until mixture will stand in soft peaks. Fold into jello mixture. Turn into crumb crust or cold pie shell. Chill until firm. Top with whipped cream, strawberries and mint leaves (optional).
