Chicken Casserole a'la Chef Niels

1 large chicken
1 package (12 oz) egg noodles
1 medium onion, diced
1 large carrot, diced
Salt and pepper to taste
1 package chicken gravy mix
Cover chicken parts with water in large pot and boil until meat can be picked from bones. Put onion and carrot in chicken water after removing chicken, and cook approx. 10 minutes. Remove from heat. Cut chicken into small chunks. Cook noodles according to package direction, but only cook halfway. Put chicken back in juice and make gravy according to package directions. Put gravy in with chicken and reheat to simmer. Mix thoroughly with noodles, place in casserole dish and bake 30 minutes at 250. Remove and enjoy!
