Chile Con Carne
2 cups red Mexican beans
2 1/2 cups tomatoes
1/2 lb ground pork or beef
3 onions, sliced
1 garlic clove
2 tbsp chili powder
1 tbsp paprika
2 tsp salt
1/8 tsp black pepper
4 dried chili peppers
1 tbsp oregano leaves
1 tsp cumin seeds (crushed
Wash beans and cover with water. Bring slowly to a boil, and simmer gently until tender, using only enough water to keep beans from burning. Add tomatoes and continue cooking. Brown pork and beef. Add onions, garlic and seasonings. Add to beans and tomatoes and cook until well blended and quite thick.
