Fruit Cocktail Cake
2 cups flour
2 tsp baking soda
1/2 tsp salt
2 eggs, well beaten
1 cup nuts
1 tsp vanilla
2 cups fruit cocktail
(1 can, including juice)
3/4 cup brown sugar
Sift together flour, soda, salt and sugar. Add eggs, vanilla, and fruit cocktail.
Mix and pour into 9 x 13 baking dish. Mix brown sugar and nuts and sprinkle over
top. Bake at 350 for 45 minutes.
Topping:
1 cube butter
3/4 cup sugar
1 small can evaporated milk
1/2 cup coconut
1 tsp vanilla
Combine ingredients and boil for five minutes. Pour over cake as it comes out of oven.
