Meat Stew
1 1/2 lbs boneless lamb or beef. (cut into 1" pieces)
2 tbsp butter
2 tsp salt
1/4 tsp pepper
2 cups boiling water
1 cup rice
1/4 cup water
6 medium sized onions
4 medium sized carrots cut lengthwise
1 cup lima beans or peas
2 tbsp flour
Place butter in heavy skillet and brown meat well on all sides.
Season with salt and pepper. Add boiling water and simmer 1 hour.
Prepare onions and carrots. Add to meat and cook 20 minutes.
Then add other vegetables and cook about 20 minutes more.
Cook rice and keep hot. Mix 1/4 cup water and flour.
Add to stew and stir until thick. Place stew on serving plate and
arrange hot rice around it.
