Peanut Brittle
1 cup sugar
1/2 cup white corn syrup
1 1/2 dry roasted, salted peanuts
1 tsp butter or margarine
1 tsp vanilla
1/4 tsp baking soda
Combine sugar and corn syrup in a medium, aluminum 3-quart saucepan. Bring to a boil
on medium heat, stirring to mix well. Cook, stirring occasionally for about 5 minutes
or until mixture reaches 260 degrees. Add peanuts and cook, stirring occasionally for
5 minutes longer, or until syrup is golden. Add butter and vanilla. Cook until mixture
reaches 275 degrees. Remove from heat; stir in baking soda, mixing well. Turn out onto
lightly buttered baking sheet, spreading as thin as possible. Cool, then break into
pieces.
