Prune Cake
1 1/2 cup sugar
2 1/4 cubes butter
3 eggs (save 2 whites for icing)
3 cups flour
1/4 tsp salt
3 tsp soda
1/2 tsp cloves
1 tsp nutmeg
1/2 tsp mace
1 1/2 tsp cinnamon
1 1/4 cup prune juice
(if not enough prune juice, use buttermilk)
1 1/2 cup (52 prunes) mashed cooked prunes, pitted
Cream butter and sugar. Add eggs and beat well. Sift together dry ingredients 2 times,
then add alternately to the creamed mixture with the prune juice. Fold in the mashed
prunes. Bake in 2 oiled and wax papered 8" square pans (loaf pans) at 350 for 50 minutes
or until done. When cool, frost with prune icing.
Prune Icing:
1 cup sugar
1/2 cup water
2 egg whites
1/2 tsp vanilla
1/2 cup cooked mashed prunes
In small saucepan boil the sugar and water until it spins a thread. Beat the egg
whites until stiff, then gradually add the sugar syrup while beating. Continue
beating until thick. Stir in vanilla and prunes.
