Rice Pudding
2 cups cooked rice
1 1/3 cup milk
4-6 tbsp sugar
1 tbsp soft butter
1 tsp vanilla
2-4 eggs
1/2 tsp grated lemon
1 tsp lemon juice
1/3 cup raisins or dates
Grease baking dish, cover sides and bottom with cookie crumbs. Combine rice, milk,
sugar, butter and vanilla in separate bowl. Add grated lemon, juice and raisins/dates.
Cover top with cookie crumbs. Bake at 325 for 50 minutes.
