Velvet Cake Layers
1 cup shortening
2 cups sugar
4 eggs
3 cups cake flour
2 tsp baking powder
1/2 tsp salt
1 cup milk
1 tsp vanilla
Cream together shortening and sugar. Add eggs one at a time, beating after each.
Sift together flour, baking powder and salt. Add alternately with milk to creamed
mixture. Add vanilla extract. Pour into two greased 9" layer pans or three 8" pans.
Bake in moderately hot oven (375) for 35 minutes. Cool for 5 minutes. Remove layers
from pans and cool on wire rack.
